Christmas Tree Meringue Cookies

…the cutest little trees I ever did see!

Meringue cookies are such a fan favorite, and are beyond easy to make! All you need is a little patience to make sure you don’t devour these before your guests arrive!

Equipment

  • Stand Mixer or Hand Mixer

  • Cookie Sheet

  • Parchment Paper

For the cookies ingredients

  • 1 tsp meringue powder

  • 3 egg whites at room temperature

  • 1 cup of granulated sugar

  • 2 tsp vanilla extract

  • Green food coloring

  • Mini Reese’s Peanut Butter Cups

  • Melted chocolate to attach the Reese’s Peanut Butter Cup bottoms

How to make these crunchy little treats

  • Preheat your oven to 250F

  • In your stand mixer, crack 3 egg whites in bowl and begin to mix on medium high

  • Once you begin to see the egg whites get frothy, begin to add in your vanilla and meringue powder

  • Once well combined, increase stand mixer speed to high and slowly add in your sugar, about one tablespoon at a time until fully incorporated

  • Add in food coloring to desired color - please note that the color will fade in the oven so I always add more

  • Once your meringue reaches stiff peaks, turn off mixer and place in your piping bag.

  • You can use any tip you like, but I find the star tip gives the best results

  • Going in circular motions, start to pipe out your trees to your desired height

  • Pipe out as many trees as you can get onto your parchment paper - mine yielded about 24 trees

  • Decorate with sprinkles as desired

  • Place cookies in your 250F oven

  • After 30 minutes, reduce your oven temperature to 200 degrees

  • Continue to bake for 1 hour and 30 minutes

  • After your cookies have been baking for two hours. Cut the heat to your oven and leave in for an additional 2 hours - this is to really dry them out

  • Once fully cooled, it’s time to get to assembling your cookies!

  • Melt chocolate under a double boiler or on the lowest setting in your microwave until silky smooth

  • Unwrap your mini Reese’s cups

  • Place a small dollop of chocolate on the top of your peanut butter cup and gently secure the bottom of your tree to the top of the peanut butter cup

  • Allow to fully set before serving.

  • Enjoy!
