Herb Ciabatta Rolls
…herby, chewy and oh so tasty
Who knew you could make ciabatta rolls at home, with just a few simple ingredients and only a few hours!
Equipment
Mixing bowl
Measuring cups
For the dough
1 packet dry instant yeast
2 cups warm water
4 cups of all purpose flour
1/2 tablespoon of salt
1 tablespoon garlic powder
1 tablespoon dried or fresh thyme
1 tablespoon dried or fresh rosemary
How to create the perfect dough
Preheat oven to 425F
In a bowl, place your warm water and dry instant yeast and allow to sit for about 5 minutes until the yeast starts to activate and bubble
Next, add in your salt and flour
Mix until well combined, the dough will become very shaggy and that is okay!
Cover with plastic wrap and a tea towel, and place in a warm place where your dough can rise - typically just one hour
One risen until doubled in size, you’ll do your first pull and stretch. This is where you’ll grab the dough from one side, releasing it from the bowl and gently folding it over the dough.
Continue to do this until you’ve made 4 full pulls and stretches. This will allow for air bubble to be incorporated into the dough
Allow the dough to rest for another 3 minutes in a warm place (covered) so the dough does not dry out
After 30 minutes, do another set of stretch and folds (4 total)
Allow to rest for another 30 minutes covered
After your 30 minutes, add in your rosemary, thyme and garlic and do your last set up stretch and folds
Lay your dough on a floured surface and sprinkle a generous amount of dough on the top as well. This will help with cutting out your rolls
Shape your rolls however you like - I typically do a square, but sometimes they end up more circular
After shaping the rolls, cover in a warm place for an additional 30 minutes
Preheat your oven to 425F
Place rolls in the oven for 10 minutes until golden brown on top
