Oreo Cakester Dupe

…nostalgia at its finest

Okay YALL these oreo cakester dupes are to die for! I was so sad when they were discontinued in 2013 and decided to try my hand at them! These are festive for Christmas with a little zing of peppermint, but you could add or omit any flavoring you prefer! Hope you try this recipe out - it will be sure to be a hit!

Equipment

  • Mixing bowl

  • Cookie scoop

  • Measuring cups

  • Cookie sheet

  • Piping bag

For the cookie dough

  • 1/2 cup of salted or unsalted butter (1 stick)

  • 2 eggs

  • 2 cups of all purpose flour

  • 1 tbsp vegetable oil

  • 1 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 cup of 100% cacao powder

  • 1 tbsp vanilla extract

  • 1/2 tsp peppermint extract

  • 2 tsp baking powder

  • 1 tbsp corn starch

  • 1/4 cup crushed peppermint sticks

For the filling

  • 1 cup mini marshmallows

  • 2 tbsp butter (melted with marshmallows)

  • 1/2 cup crisco vegetable shortening

  • 1 cup powdered sugar

  • 1 tbsp clear vanilla

Out of this world delicious!

  • Preheat your oven to 350F

  • Cream together butter, flour, sugars, oil, egg, vanilla, peppermint extract, baking soda until well combined

  • Add in cocoa powder

  • Once well combined, grab your cookie scoop (or about a tablespoon) of the dough if you want larger cookies and place about 12 per sheet

  • Using a small round cup, gently press down each cookie before baking to flatten it out a tad

  • Bake in the oven for 10 minutes at 350F

  • Let cool completely before icing

Lets make the icing!

  • Measure out 1 cup of mini marshmallows and place in a microwave safe bowl

  • Add in 1 tablespoon of butter to the marshmallows and melt in the microwave for about 40 seconds (in 10 second increments stir).

  • Once fully combined (almost as if you’re making rice crispy treats) add in your 1/2 cup of vegetable shortening and 1 cup of powdered sugar

  • Using your mixer, mix on high until all ingredients are fully combined - you will have to work quickly to make sure that your marshmallows don’t cool too quickly

  • Place icing in a piping bag and begin to ice your cookies (once fully cooled).

  • Store in the fridge until ready to be devoured

  • Enjoy!
