Peppermint Cookies

…festive with a sweet hint of peppermint

Tis the season for all things peppermint! December is my favorite time of year to try new recipes including this tasty batch of peppermint chocolate chip cookies. These come together in no time and you don’t have to cream anything together - it’s a one stop shop!

Equipment

  • Mixing bowl

  • Cookie scoop

  • Measuring cups

  • Cookie sheet

For the cookie dough

  • 1/2 cup of salted or unsalted butter (1 stick)

  • 1 egg

  • 2 cups of all purpose flour

  • 1/4 cup oil

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 tbsp vanilla

  • 1/2 tsp baking soda

  • 1/2 cup white chocolate chip cookies

  • 2/3 cup dark chips

  • 1/4 cup crushed peppermint sticks

Perfect for any Christmas cookie exchange or potluck

  • Preheat your oven to 350F

  • Mix together butter, flour, sugars, oil, egg, vanilla, baking soda and stir until well combined

  • Add in all chocolate chips and stir to combine

  • Lastly, add in your crushed peppermint sticks and gently stir to combine

  • Scoop out 12 cookies per sheet (this recipe makes about 28 smaller sized cookies and about 10 jumbo sized cookies)

  • Bake in the oven for 10 minutes at 350F for smaller cookies, and for larger cookies bake for about 13 minutes
