Simple Sugar Cookie Bars

…anyone with a sweet tooth will love these

These sugar cookie bars remind me of my childhood! Simple and sweet! Hope you enjoy them as much as me and my family do!

Equipment

  • Mixing bowl

  • Measuring cups

  • 9x13 pan

For the cookie portion

  • 1 cup salted butter

  • 1 and 1/2 cups granulated sugar

  • 2 eggs

  • 1/2 tsp almond extract

  • 1 tbsp vanilla

  • 1/2 tsp baking soda

  • 3 and 1/2 cups flour

For the icing

  • 1 and 1 half sticks of salted butter

  • 3 cups of powdered sugar

  • 1 tbsp vanilla

  • 1/2 tsp almond extract

  • A dash of salt

Tasty and not sickeningly sweet

  • Preheat oven to 350F

  • First, cream your butter, sugar, vanilla, almond extract, and eggs until well combined

  • Next, add in your flour and baking soda until combined

  • Line a baking dish with foil (I use a 9x13), but you can use whatever you have on hand

  • Bake in the oven for 30 - 40 minutes depending on the thickness of the batter

  • You’ll want to look for a light golden brown color on the top of the crust.

  • Let dough chill to room temperature before icing

For the icing

  • Cream together butter, almond extract, and vanilla until light and fluffy

  • Next, add in your powdered sugar and mix on high until well combined and no longer lumpy

  • Add in whatever food coloring you desire - I used a pastel color and it takes ALOT of food coloring to get the desired color

  • After reaching your desired color, place icing on top of sugar cookie bars and smooth out

  • Add any sprinkles you like and enjoy!
